Kielbasa and rice “Skillet Meal”
First recipe up on the blog, how exciting! This one is a kielbasa sausage, and rice based meal that’s cooked in a cast iron skillet, hence why the family refers to it as the “skillet meal.” I’m going to be completely honest and tell y’all that I don’t measure seasonings. I just add until it feels right. So, these are highly estimated measurements.
INGREDIENTS
- 1 cup white rice
- olive oil
- 2 pkg smoked sausage
- 1/2 red bell pepper – sliced
- 1/2 yellow bell pepper – sliced
- 1 small white onion – diced
- garlic – minced
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 can of tomato sauce
- A box of chicken broth – divided
- 1 tsp paprika
- 1/8 tsp cayenne pepper (optional)
- We also add in garlic powder and onion powder to taste… to virtually every recipe.
INSTRUCTIONS
- Start by cooking the rice according to the package’s directions. It’s usually a 1 cup of rice/2 cups of water ratio. Instead of using water, use chicken broth in its place.
- Place the cast iron skillet over a large burner on medium-high. Once the skillet is hot, add olive oil. After the oil starts to shimmer, add the sausage and cook until it’s browned on both sides. While the sausage is cooking, dice your peppers, garlic, and onion. Remove the sausage from the pan and set aside in a bowl.
- Add the peppers and onion, sauté until the onions are translucent. Then add in the garlic, salt, and pepper, cook until fragrant. Remove from the pan and add into the bowl thats set to the side, with the sausage.
- Add the half can of tomato sauce and about 1/3rd cup of chicken broth to the skillet. Allow the mixture to simmer together and then add the paprika and (optional) cayenne.
- Finally, stir in the cooked rice, sausage, peppers and onions until combined.
